RECIPES FOR BUSY PEOPLE:MEATBALLS AND A QUICK AND YUMMY DESSERT

This is delicious and easy to make, it can be made the night before and just put in the oven when you get home. I like to serve it with fresh green beans and yellow wax bean mixture. My family loves jello, so I make jello with fruit in it the night before also.
Serves 4
MEATBALLS
1 pound ground turkey, 1/2 cup instant rice(uncooked), 1/2 cup finely diced onion, 2 TBSP chopped fresh parsley, 1/2 tsp. ground thyme, 1 tsp. salt, 1/2 tsp black pepper.
Mix together well and form into meatballs, the size is up to you, either a few bigger ones or lots of little ones. Set aside.
SAUCE
1 15 oz can tomato sauce, 1/2 cup chicken broth, 1 fresh garlic clove crushed, 1 TBSP worcestershire sauce. Mix together well .
Spray a 2 quart casserole with non-stick cooking spray and lay the meatballs in. Pour the sauce over the top and cover. Bake at 350 for about and hour. When you take them out you will see the rice popping out of the meatball forming the "porcupine". Serve hot
This can be adapted to stuffed green peppers, my family however doesn't care for green peppers so this is how I make it.
Jello has a sugar free black cherry flavor that we love. I like to make it and then add some canned and drained black sweet cherries that I chop to it.
ANOTHER DESSERT THAT TOOK A LITTLE MORE TIME
Dessert : ICE CREAM CAKE
This is a very easy to make and delicious dessert, but it must be made ahead.
8 oz. Cool Whip
12 ice cream sandwiches with any flavor ice cream in them that you want, the neapolitan is really fun.
ice cream toppings, sprinkles, nuts, chocolate sauce, etc.
Take and 8 inch pyrex dish and layer ice cream sandwiches tightly together, cut to fill in spaces if needed. Spread a layer of cool whip over and then another layer of sandwiches. Top off with another layer of cool whip and wrap tightly in foil and freeze for several hours or overnight.
At serving time let it sit out for about 5 minutes to soften and I like to add ice cream toppings to the top. Nuts, chocolate syrup, sprinkles, you can be creative here. Cut it into squares and serve. I know it sounds too simple but it is really good all frozen together. Give it a try and let me know what you think.

Porcupine Meatballs was a favorite when I was in scouts, haven't thought about it in years.
