RECIPES FOR BUSY PEOPLE PIZZA MEATLOAF

Serves 4

Ingredients: 1 lb. ground beef, 1/2 lb. ground pork( you can use ground turkey or all beef)

1-1/2 cups pizza sauce (I prefer Contadina) divided

1 cup grated mozzerella cheese

1/2 cup grated Parmesan cheese

1 small onion finely chopped

1/2 cup dry bread crumbs

1 egg

1/2 tsp. each basil and oregano

1 tsp salt

1/2 tsp black pepper

1 garlic clove crushed

1/2 cup mushrooms

1/2cup sliced pepperoni

This is a delicious alternative to boring meatloaf

Mix together the ground meat, 1 cup of the pizza sauce, bread crumbs, egg, parmesan cheese and all the seasonings well.

Spread out the meatloaf into a rectangle on a piece of foil so that it is flat and about an inch thick. Spread 1/2 cup grated mozzarella cheese, top with 1/2 cup mushrooms and 1/2 cup slice pepperoni. You can be creative here, whatever you like on pizza can go inside in a thin layer. Roll up with the foil to help you like a jelly roll starting at the shorter end. It will be a little messy but get it all rolled up and then make sure to seal all the edges by pinching the meat together. Place in a baking pan and bake at 350 for 40 minutes. Remove from oven and remove excess grease, I like to use a baster and just squeeze it out and discard. Spread 1/2 cup pizza sauce over top and add 1/2 cup shredded mozzarella cheese and bake for 5 more minutes. Serve hot.

 I love pizza and this is a delicious and easy way to get the taste. I like to serve it with a nice lettuce salad and fresh bread. It doesn't take long to make it and you can make it the night before and roll it up in the foil and refrigerate overnight. A simple yummy meal and not a lot of clean up. It takes a little longer to do the roll up then a regular meatloaf but it is worth it when you cut it.
